Preheat your oven to 425 degrees and line a shallow pan with foil. Peel each carrot and cut off the tip and the end off of each one. Cut carrots in half cross-wise, then cut length-wise, then cut length-wise again.Combine the carrot sticks, olive oil, salt, pepper, and rosemary and stir until they are evenly coated. Spread the carrots over the pan as much as possible.Bake your carrots for about 20 minutes or until carrots are tender. Serve them hot or cool them a bit to room temperature.

Healthy Recipes for Kids #2: Chicken Tortilla Soup

This is a family favorite and is easy on Mom and Dad in both the prep and the clean-up!

Chicken Tortilla Soup

Onion, chopped tsp. Garlic, minced4 tsp. Cilantro, chopped1 T Butter30 oz. Chicken Stock8 oz. can Tomato Sauce package of Taco Seasoning14 oz. can Mexican Style or Plain Stewed Tomatoes4 oz. can Diced Green Chilis1 small can of Corn, drained1T Worchestire Sauce4 Boneless, Skinless Chicken Breasts (these can be frozen)

Put all the ingredients into a Crock Pot and cook on low for 8 hours. A half an hour prior to serving, pull out the chicken and shred. Put the chicken back into the soup and cook the remainder of the time (half an hour).

Serve with cheese, tortilla chips, avocado, and sour cream.

Healthy Recipes for Kids #3: Baked Spaghetti

Baked Spaghetti

1 lb. lean Ground Beef10 oz. Whole Wheat Spaghetti2 C Mozzarella Cheese, shredded2 26 oz. jars of your favorite Spaghetti Sauce (make sure your sauce contains healthy ingredients and no sugars)

Preheat your oven to 350 degrees and spray a 9 x 13 pan with cooking spray.

In a large skillet over medium heat, brown the ground beef, drain and mix in your spaghetti sauce to the ground beef.

Prepare your pasta according to the packaged directions and drain.

Spoon one-third of your spaghetti sauce mixture into the bottom of your prepared pan and then mix the remaining spaghetti sauce mixture with the cooked spaghetti. Pour into the prepared pan and then top with the shredded cheese.Bake for 25-35 minutes until brown and bubbly. Let baked spaghetti rest for about 10-15 minutes before serving. Serve with a healthy salad and garlic bread. Enjoy!

If you love a full English breakfast, this is still the book for you......but if a Herb Omelette with Cherry Tomatoes is more you.......the good news is.....that is here, too. Based on that, I think, it would be fair to say that 'Healthy Appetite - Recipes from the f Word' is unlikely to disappoint many!

My only criticism is that I do miss the quick reference recipe list at the front, but this is just habit from my very regular use of Gordon Ramsay's Fast Food: Recipes from "The F Word"!

Another reviewer wrote Healthy doesn't always mean diet!,

Gordon Ramsy's healthy Appetite is a must have for those who want great tasting food without all the calories and fat. It seems some have been put off by the fact that this is not a diet book. No one ever said it was. Rather, it is a healthy approach to eating without blowing your entire way of living out of the water. What Ramsay wants to make clear (I believe) is that there are several factors involved in healthy eating: proportion, moderation, seasoning, and the right combination of foods, just to name a few.

Highlights for me include the "Four Cabbage Coleslaw," the "Penne Primavera," and the "Pot roast sirloin of beef." Other may warm to the "Glazed Gammon with pineapple Salsa," which I haven't tried yet but will soon.

While the recipes are the main thing, there's also chapters on the "bad" fats and getting the right balance of things on the plate. Overall a great cookbook, on the same par for me as Delia's How to Cheat and The Kitchen Diaries. Anyway you slice it, Ramsay has it going on, hands down!

Another Customer told that this was his favoyr GR cookbook, I have quite a few Gordon Ramsey books and I consider myself to be a more than competent cook at home. Modest I know. I like to cook for people and I have a strong interest (some would say obsesession bordering on fetish) in food, where foods comes from, breeds, varieties, seasons etc. However, I do find that a lot of cook books out on the market, particularly from chefs yet alone Michellin starred chefs go too far. They seek to give tangible copies of the fantasy of their restaurants in your home, initially in hard back.

This is the first of his books that I have found myself using almost daily. I have a girlfriend who is on WeightWatchers at the moment and if any of you are going through that experience of looking at ingredients, trying to manage your points, you don't believe that X ingredient can be tasty etc then this book is really an asset in order to see what combination work well and do not compromise taste. What I like about this book is that I think it really reflects that kind of things that I eat for myself anyway and it either provides a different way of making/presenting things or it just simply gives me new ideas.

Ramsey is very clear that this is not a diet book as discussed by another reviewer. It is not a diet book. Not at all. But it is a book to keep close to you when you have seen things in supermarkets and you're either not sure what they are or you would like to know what to do with them. I am not a baker but I have made so many of his muffin recommendations since I have bought the book much to the delight of my housemate and, again, said girlfriend.

I would highly recommend this book over many of his others if not for the fact that it is far more practical and I would encourage anyone to have a crack at some of the recipes in it. Since spring is finally here, sort of (it snowed here in Denver on Easter day, sigh), I thought I would share one of my favorite strawberry recipes with you. It is a pretty easy recipe that does not even require any baking. Start to finish, it takes about 20 minutes. As I do at my baking site, I am going to share with you here the story behind the recipe.

Cream Cheese Strawberry Pie

Strawberries are my favorite fruit. I always have them around when they come into season in the spring. It always brings back memories of going to pick berries with my family in the summer. We would all pile in the car with buckets and ice cream pails, eager to taste fresh summer berries. We would go to one of the nearby berry farms that had acres and acres of berries. I remember it seemed so huge to me as a kid and I could not believe how many rows upon rows upon rows there were. All of us kids of course ended up eating just as many berries as we picked. There is nothing that has quite as much flavor as a strawberry fresh from the field, warm with sunshine. Makes me want to go hunt down a local berry farm so I can share that memory with my daughter!

Prepare the vanilla pudding according to the package directions. (Put the pudding mix and the milk into a bowl and whisk together for 2 minutes.) Allow it to set for 5 minutes. I usually use this time to start washing and cutting the strawberries. I typically just cut them in half for this recipe. Once the pudding has set, place the cream cheese in a medium sized bowl and mix with an electric mixer for 30 seconds at low speed. Add the pudding to the cream cheese and mix for about one minute on low speed. Put the mixture into the pie crust and put it in the refrigerator for 10 minutes. Continue washing and cutting the strawberries while the pie is in the refrigerator. Place the strawberries on top of the pie. Store any leftovers in the refrigerator.
