Easy Chicken Recipe - Chicken Parmesan

This tasty Italian classic has been modified a little by adding longhorn cheese in addition to the Parmesan. The recipe looks a little complicated and drawn out but it really isn't hard to do. Assembling the ingredients will take almost as long as the cooking. The cooking is done in 3 stages: First the chicken tenders are coated with a mixture of bread-crmbs, spices and Parmesan cheese, then they are cooked. I used my favorite black iron chicken fryer skillet. The trick to get good flavor development is to be sure to allow the chicken pieces to brown and then to scrape all the little brown bits that stick to the bottom of the skillet, secondly the sauce is heated in the same skillet (to capture all the little bits), and thirdly the parts are combined and finished off by melting the longhorn cheese under a broiler.

1 pound skinless, boneless chicken breast tenders

1 1/3 cups grated parmesan cheese

1/4 cup soft bread crumbs

1 tablespoon dried parsley flakes

1/4 teaspoon salt

1/4 teaspoon pepper

1 egg, beaten slightly

1 tablespoon butter

1 1/2 cups spaghetti sauce

2 teaspoon lemon juice

1/3 cup shredded longhorn cheese

1/2 teaspoon basil (dried)

Instructions:

1 - Preheat broiler


2 - Combine 2 tablespoon parmesan cheese, bread crumbs, parsley, basil & 1/8 teaspoon salt


3 - Dip each chicken tender in egg, then crumb mixture


4 - Melt butter in cast iron skillet and cook chicken tenders approximately 3 minutes per side, then set aside.


5 - Combine remaining salt, spaghetti sauce, lemon juice, and pepper in the same skillet.


6 - Heat this sauce for 5 minutes with occasional stirring.


7 - Place chicken

pieces in oven proof bake dish, then pour sauce over, sprinklewith longhorn cheese and remaining parmesan cheese.


8 - Broil for 2 minutes or so, just enough time to melt the cheese topping.

There is a lot of misunderstanding on the surface about the subject of British cuisine. This is mainly because British cuisine varies widely, depending on what part of the country you're visiting. British fish and chips are amazingly crackly, cooked until the coating is rich brown and salty, and the meat inside tender white and flaky. Chips, or potato wedges, are served hot and crispy on the side, and generally the whole thing is smothered in as much vinegar and salt as the consumer can stand. There is something distinctly British about that malt vinegar- left on the tables at restaurants like American ketchup.

The smells and flavors of traditional British cuisine are well worth experiencing. If you find yourself in England, take time out to explore the sites, the back pathways and rolling fields. And stop at a bakery for a pasty, stop for fish and chips. Order tea instead of your usual coffee. The British experience just isn't the same if you miss out on this marvelous tradition- authentic British food!

Fast Dinner Recipes - Food

We all know that we need fast dinner recipes to get dinner on the table quick. Very seldom do any of us have time to make everything from scratch and spend hours in the kitchen. Here are some of my favorite fast dinner recipes to get dinner on the table in a jiffy!

Salisbury Steak

This recipe doesnt take much prep time, but it does take a bit of time to bake, so plan ahead for that. The sauce has a nice zip to it, thanks to the barbecue sauce and the stuffing mix adds a nice flavor to the patties and helps to make this a quick fix dinner. To make this recipe even faster, substitute dehydrated onion flakes for the chopped onion.

Ingredients:

1 lb ground beef1 package stuffing mix for chicken1 cup water, divided c chopped onion (or 1 tablespoon dehydrated onion flakes)8 oz fresh mushrooms, sliced c barbecue sauce

Directions:

Preheat oven to 375 degrees.

In a large bowl, mix together then ground beef, stuffing mix, 1 cup water and the onion. Pat into inch thick oval shaped patties. Put in a large baking dish and bake for 25 minutes.

While patties are baking, spray a skillet with cooking spray and heat over medium-high heat. Saut mushrooms for 5 minutes, stirring every once in a while. Add remaining water and the barbecue sauce. Turn heat down to low and cook 1-2 minutes or until the sauce is heated.

Serve sauce over patties.

To round out this meal, serve with green beans and potatoes baked in the microwave while the patties are baking.

Zippy Chicken & Pasta

This is a fun and colorful fast dinner recipe that kids and adults love. Its a great way to get kids to enjoy eating their veggies. This is a complete dinner on its own so its especially fast. Since its fairly light, dessert would be a good addition to this dinner.

Ingredients:

1 (8 oz) package fusilli or rotini pasta c Italian salad dressing, divided1 lb boneless, skinless chicken breasts, cut into chunks2 cups broccoli florets1 large red pepper, chopped1 small onion, sliced thin1 tablespoon chopped fresh parsley (or 1 teaspoon dried) cup grated parmesan cheese

Directions:

Follow directions on package for cooking pasta.

While pasta is cooking, in a large skillet, heat cup of the dressing over medium-high heat. Add chicken chunks and cook about 5 minutes or until the chicken is cooked through. Stir occasionally. Add vegetables and parsley to the pan and cook 5 minutes longer.

Drain pasta. Add to chicken mixture and stir well. Add remaining cup of Italian dressing and toss to coat. Sprinkle with parmesan cheese.

A fun twist on this dinner would be to substitute shrimp for the chicken. If you make this substitution, you should reduce the cooking time to about 2 minutes or just until the shrimp turns pink. Shrimp will turn rubbery if overcooked, so its important to watch your cooking time.

Since this fast dinner recipe is a complete meal in one bowl, there really isnt anything to be added to round out this meal. But since its nice and light, a quick dessert would be fabulous. I would suggest a pudding parfait. Just take your favorite flavor of pudding, layer it with cool whip and some graham cracker crumbs in a pretty glass and there you have an easy but fancy looking dessert.

Then you need only simmer, covered for about 30 minutes, giving the sauce a stir every now and then while you boil up a pot of water and in it cook your favorite pasta.

You can easily make something out from lemon pepper and/or chili powder. Some soy sauce or even oyster sauce might do the trick.

If you're a little bit weight conscious, you can pack some tuna pasta or tuna salads. All you need are some greens, balsamic vinegar, tomatoes, olive oil, and maybe some nuts or cranberries, and tuna. Just mix everything up, add some pepper if you like it and munch away. You can replace tuna with turkey or chicken. You have a good and fulfilling lunch right there.

You can have pasta as well. Prepare a sauce from pesto add some cheese and spicy Italian sausages and voila. Combine with some bread and you'll survive until dinner.

If you have time before you go to work, you can already prepare some burger patties for a dinner meal. Your patties can be made from pork, turkey, or chicken mixed with breadcrumbs. The advantage here is that everybody can grab their favorite dish out of the freezer and eat it without anybody having to cook additional food.

One of the fastest, easiest and still healthy recipes that I know: take deli sliced turkey breast and baby spinach leaves. Spread the turkey with good mustard and sprinkle with the spinach leaves, roll up just as they are. Serve with chopped, raw veggies and make it a finger food kind of meal. The kids will love it, and I won't tell them that it's healthy. It will be our secret.

Directions

Cook macaroni according to package; drain well, rinse with cold water anddrain again. Turn into a large bowl. Add artichokes and their liquid,mushrooms, cherry tomatoes, olives, parsley and basil; toss gently.

Cover and refrigerate for at least 4 hours. Before serving this easy recipe, season with salt and pepper to taste.

BLUE CHEESE STUFFED MUSHROOMS

Ingredients

20 lg Fresh mushrooms

2 tb Butter or margarine

1/4 c Finely chopped red pepper

1/2 c Heavy cream

1/3 c Crumbled blue cheese

1 1/2 c Cooked rice

1 tb Minced fresh basil

1/8 ts Ground white pepper

Directions

Clean mushrooms with damp paper towel. Remove mushroom stems; finely chop stems and set aside. Saute mushroom caps in butter in skillet until almost tender; drain on paper towels. Saute mushroom stems and red pepper in skillet. Add cream; bring to a boil. Reduce heat and add cheese; cook until melted. Stir in rice, basil, and pepper; cook until thoroughly heated. Spoon rice mixture into mushroom caps. Place mushroom caps in greased shallow baking pan. Cover and bake at 350 F for 10 minutes or until tender. Drain on paper towels. CHINA SAM'S CHICKEN WINGS

Ingredients

1/4 c Lite Teriyaki Marinade

1/4 c Oriental BBQ Sauce, Kikkoman

1/4 c Lee Kum Kee, (oyster sauce)

1 tb Brown sugar

12 md Chicken wings, whole

1 ts Oriental Season, Amyway

1 ts Hot and Spicy Stir Fry Season

1 ts Soy, Kikkoman

Directions

Separate drumette from rest of wing. Place on broiler pan skin side down. Season with Oriental Seasoning and Hot and Spicy Stir Fry Seasoning (from Calaphon). Place on middle rack of preheated oven to broil. As wings start to cook, begin making dipping sauce. Place Teriyaki, Oriental BBQ, Soy and brown sugar together, whisk. When wings start to color good, 10 minutes or so, remove from oven and turn over, season slightly, return to oven. When wings are Golden brown on this side, remove. Dip and shake of excess sauce. After all have been dipped return to broiler pan and return to oven. Let broil until a bit crusted, not more than a few minutes. This fried chicken recipe is great as an appetizer or side dish with fried rice. Try with a glass of plum wine. Originally from Miss BeHavin's Haven, 1993.

Lightly toast your bread and at the same time heat the spaghetti up, but don't overheat. Grate enough cheese for your needs. Put a thin layer of spread on your toast and then cover with the warm spaghetti. Cover the spaghetti with grated cheese and then pop under the grill until the cheese is melted to your taste. Transfer to a warm plate and eat.

That's a really quick, filling and easy recipe and you can either make it as a snack with one round of toast or a meal with 2 rounds of toast.

Jacket Potato With Tomatoes, Cheese & Onion

I've sometimes added cooked, sliced mushrooms instead of or with the onions, or used low fat cheese slices instead of grated cheese. I also use baked beans instead of tomatoes on occasion.
