Easy healthy recipes to keep you fighting fit all year round - Food

We all want to stay healthy without having to survive on plain oatcakes and tasteless, watery salads and there are a plethora of easy, healthy recipes around to help you do just that. You'll find that certain ingredients, such as chicken and salmon, will keep cropping up but there are endless salmon recipes and chicken recipes so there's no danger of you getting bored.

One of the many health benefits of salmon is its high vitamin D content, almost unbelievably a portion of wild salmon can provide almost the entirely recommended daily intake of the vitamin, which is proven to boost the immune system, maintain the balance of calcium in your blood (which means a healthy nervous system), maintain a healthy bone density and it may even help to regulate blood pressure.

Salmon is a versatile fish that even many people who don't like other types of fish can enjoy, it has a meaty texture and a light and delicate flavour which can take on other delicate flavours as well as bolder flavours, depending on the time of day, the season and the occasion. For a light summer supper, give salmon linguine a whirl; simply cook the linguine according the instructions, drain but retain some of the cooking water and set the pasta aside. In another pan, add the saved water, salmon flakes, lemon juice, crushed garlic and crushed chillies and bring to the boil. Add the pasta to the pan with the other ingredients, mix together well and serve immediately with a side of wilted spinach.

Another great, classic dish is salmon fillets with baby new potatoes and watercress, or any other green that is in season. Boil the baby new potatoes as instructed in a pan of salted water then heat some olive oil in a pan and add the salmon fillet flesh down for between three and five minutes depending on the size of the piece and watch it carefully so it doesn't burn or stick. Then turn the heat down before turning the fish over, being careful not to break it as you do so and then add lime juice for the remaining five minutes of cooking time. Plate up the fish with the new potatoes and serve with a dollop of soured cream or drizzle with a dressing of your choice.

Whatever salmon recipe you decide to go for, you can guarantee that it will become part of your easy healthy recipes repertoire and stay there for a long time.

If you're looking for easy healthy recipes then you're bound to find a salmon recipe in there and that's because the fish is delicious, low in bad fats and high in good fats, high in vitamin D and the canned version contains high levels of calcium.
